Is there any way to prevent Irish potatoes from turning green? I have heard this
green color can be poisonous, is it? Anyway, these potatoes aren’t as tasty. I
hope someone can help.
Potatoes turn green if they are exposed to sunlight. It will occur if they aren’t planted deep enough, or if they are stored with exposure to sunlight or fluorescent lights. The green portions contain an alkaloid, solanine which makes them bitter. Solanine is considered a toxin, and you should not eat the green portions of the potato. It isn’t going to kill you, but I wouldn’t eat a lot of it. If your potatoes have gone green, either cut off the green portions, or store them in the dark for two to three weeks until all traces of green are gone.
