Herbs - General Information

'Q' (Question)  (October) I've transplanted some of my tender herbs to over winter them inside. Now the outside pots look so empty. Are there any herbs that will survive our winters in pots if I am careful to protect the pots during the worst weather?

'A' (Answer)  There are numerous herbs which can over winter outdoors, but give them a pot large enough to succeed. Containers dry out even in the winter, plus the soil temperature does get colder. Parsley and cilantro are two great herbs for winter. Mixed in with pansies and violas, they look great. Flowering kale and cabbage, Swiss chard, beets and mustard greens could also be used. Rosemary is an herb that over winters most years, however pot size will be an issue. The larger the better for root protection.
